The Piperade

The Piperade

Ingredients

  • 12 sweet green peppers
  • 1 onion
  • 2 cloves of garlic
  • 5 kg of large tomatoes
  • 1 lump sugar
  • 1 egg
  • Espelette chilli powder and salt

Preparation

Fry in a pot with a little oil: the onion cut into strips, garlic and sweet peppers that you have seeded and cut into pieces.

Scald the tomatoes to peel them. Then cut them into pieces and add them to the pot. Reduce by cooking over low heat for about 1 hour and a half.

Season with salt and pepper with Espelette pepper. At the end of cooking, add the egg, beating vigorously and sugar to cut the acidity of the tomato if necessary.

Note: Cooking time increases with the amount of tomatoes used.
