The guindillas are back!

Guindillas or Ibarra peppers (Ibarrako pipermin in Basque or under the label Ibarrako piparrak, Guindillas de Ibarra in Spanish) is a red pepper ecotype developed in the Basque Country. It is mainly found in the ibarra area (Guipuscoa). It is renowned among consumers for its flavour and tenderness.

It can be eaten as a starter, with cold meats or served in a dish with a little salt and olive oil.

It can also be added to a pintxo for an aperitif, usually in the form of a "mini-brochette" containing a chilli pepper, accompanied by one or two stuffed olives and a dash of anchovy.

Finally, in a more recent and very successful recipe, the fresh chilli can be fried in olive oil and served in a dish with a little salt.
