Basque Chicken

Ingredients

  • 1 chicken or 6 chicken pieces
  • 3 cloves of garlic
  • 3 onions
  • 700 g red and green peppers / sweet green peppers
  • 1 kilo of tomatoes
  • bouquet garni
  • 20 cl white wine
  • 6 tablespoons olive oil
  • salt, pepper or Espelette pepper

Preparation

Cut the chicken into 6 pieces or use pre-cut chicken thighs and whites. Then cut the peppers in half, seed them by passing them under water and cut them into strips. If you have sweet green peppers, do the same.

Chop the onion and garlic. Peel the tomatoes, cut them and remove the hard internal parts. Prepare a casserole dish and heat it with 4 tablespoons of olive oil. Pour in the garlic, onion and peppers (and sweet green peppers) and sauté over low heat for about 5 min, making sure to mix continuously with a wooden spoon. Then add the tomatoes, salt, pepper and cook covered for 20 minutes on low heat.

In a sauté pan, brown the salted and peppered chicken pieces in olive oil. When they are golden, add them to the vegetables, cover. Add the bouquet garni and white wine. Cook for 35 minutes.
