Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner. 

Preparation tips

Made from carefully selected trout, these natural rillettes will win you over with their melt-in-the-mouth texture and authentic flavor. They highlight the delicate taste of the fish, simply seasoned to preserve all its finesse. Ideal spread on country bread, enhanced with a squeeze of lemon, they can be enjoyed as an appetizer or as a starter accompanied by a salad, for example.
