Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner. 

Preparation tips

Delicately prepared from carefully selected trout, this fillet is marinated in lemon to bring out the full delicacy of its flesh. The subtle balance between the tangy freshness of the lemon and the natural sweetness of the fish offers a light and refined taste experience.
