Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner. 

Preparation tips

A melt-in-the-mouth trout steak accompanied by a flavorful Pyrenean sauce, with authentic regional notes. A generous and indulgent recipe, ideal for a simple hot dish full of character. It can be served with mashed or oven-roasted potatoes, or even quinoa. To appreciate the product at its best, it is best to reheat it very slowly at a low temperature.
