Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner. 

This trout brandade is an original alternative to the traditional brandade, prepared with 50% trout. It is a simple recipe with a delicate flavor. Its creamy texture and refined character make it a surprising spread, ideal for aperitifs that are out of the ordinary.
