Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner.

This terrine combines the melt-in-the-mouth tenderness of smoked trout with the subtle, fragrant warmth of Espelette pepper. Carefully smoked, the trout reveals delicate aromas, enhanced by a perfectly balanced hint of spice.
