In the heart of the French Pyrenees, mountain streams known as gaves provide naturally pure water from high-altitude springs. This unspoiled environment is ideal for raising high-quality trout. Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner.
This trout flake is enhanced by the tangy freshness of candied lemon. This recipe combines the mildness of the fish with slightly candied lemon notes, for a perfect balance between melt-in-the-mouth and liveliness.
