Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner.

This trout flake is enhanced by a creamy eggplant caviar, where the sweetness of the fish meets the creamy richness of the eggplant.

Preparation tips

Delicious on toast or brioche bread, eggplant caviar adds creaminess and Mediterranean flavors, perfect for a gourmet appetizer.
