Our partner, the La Truite des Pyrénées fish farm, has been located at the confluence of three iconic gaves—Barèges, Gavarnie, and Cauterets—since 1953. For more than half a century, fathers and sons have followed in each other's footsteps, continuing the family tradition of producing exceptional trout with tender, delicate flesh in an ethical, sustainable, and responsible manner.

This melt-in-the-mouth trout flakes are enhanced by sorrel, which adds a fresh vegetal note and a slight acidity, perfectly balancing the sweetness of the fish.
